Ingredients
For the filling:
- 9 cups sliced peaches (about 8 fresh peaches or 3 lbs)
- 1 tbsp lemon juice
- 1/2 cup granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp cornstarch
- 1/2 tsp salt
For the topping:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 12 tbsp chilled, grated butter
- 1/2 cup boiling water
For cinnamon sugar topping:
- 1/3 cup granulated sugar
- 2 tsp ground cinnamon
Instructions
- Preheat oven to 425°F (220°C). In a large bowl, mix peaches, lemon juice, 1/2 cup sugar, cinnamon, nutmeg, cornstarch, and salt. Transfer to a 9×13-inch baking dish.
- Bake the peach filling for 10 minutes. Meanwhile, mix flour, 1 cup sugar, baking powder, and salt. Add grated butter and toss. Stir in boiling water until lumpy.
- Spoon topping over hot peach filling. Mix 1/3 cup sugar with 2 tsp cinnamon and sprinkle over topping.
- Bake 25-30 minutes or until golden and bubbly. Place the dish on a baking sheet to catch drips. Let cool slightly and serve warm with vanilla ice cream. Enjoy!
